Still trying to work through the last of those Thanksgiving leftovers? The men in my house have a solution for you: Thanksgiving Leftovers Pizza!
My husband cooks sometimes, so announcing he and my son were going to make dinner wasn’t strange in itself. It was the mischievous glint in his eye that got my attention. They had hatched a plan on the way home and wanted to see if it would actually turn out. I couldn’t argue with that, since I do it on an almost daily basis.
Their pizza started out, as all pizza in our house does, with this crust recipe:
Pizza Crust
2 cups lukewarm water
1 package yeast
4 tablespoons olive oil
1 teaspoon salt
6 cups flour
Preheat oven to 475. Stir yeast into water until dissolved. Add oil and salt. Stir. Add flour. Stir until completely combined. Divide in two for two large pizzas. Press into a circle on a lightly greased pizza pan.
This is where the boys added their own spin on it. Spread turkey gravy, thinly and evenly over the crust.
Gently spread mashed potatoes over the top of the gravy.
Add chopped turkey over the potatoes.
Joel added some bleu cheese. Definitely optional if you’re not a fan.
The red seasoning here is ghost pepper. Because my husband is insane. If you’re a normal human, you could add a little sage, rosemary or parsley here – something that won’t hurt you.
Carefully spread stuffing over the turkey.
Sprinkle a little cheese of your choice over the top.
Bake at 450 degrees until the cheese has melted and the crust is brown. I love how the cheese magically multiplied some time after the camera and I left the room.
The verdict from the chefs is that this tastes a lot like a turkey pot pie. I’m going to see if I can get them to throw in a vegetable next time, although I was already told they’re counting the celery in the stuffing.
I cannot believe you all did this! My hubby and I were talking on Thanksgiving how awesome it would be to make a pizza out of the leftovers! Great minds think alike!

I tried the pizza though – it would be good with a more reasonable amount of cheese!
