I’m working on a project I’m anxious to share, but I’m not quite finished with it yet. However, I did take the time to do a little cookie experimenting so I’ll tell you about that instead. There’s something about summer that makes me crave lemon. And there’s something about waking up every day that makes me want cookies, so I decided to combine the two. The results were delicious.
Lemon Oatmeal Cookies
1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 package unsweetened Lemonade flavor Kool-Aid
1 1/2 cup oats
1 12-ounce package vanilla chips
Preheat oven to 375. Cream the butter and sugars together. Stir in the egg and vanilla. Add the flour, baking soda, baking powder and Kool-Aid and mix well. Stir in the oats. Add the vanilla chips. Drop by teaspoons onto an ungreased baking sheet. Bake for about 10 minutes, or until edges start to brown. Cool.
These cookies spread and are a bit lacey. If you like them thicker, add another 1/4 cup of flour. Next time I make these I’m going to try two packages of Kool-Aid for a bolder lemon flavor. I’d also like to try different Kool-Aid flavors and chip combinations. Luckily, my family inhales them fast enough I can do all the experimenting I’d like.
